Julius Metzger: Invisible Labor Bar
As part of the special program for the artist Julius Metzger (*1991, based in Cologne) will conceptualize a bar with fermented drinks and snacks.
The underlying theme of fermentation at the bar will be explored in this informal setting both narratively and performatively. Fermentation is a directed transformation of food using microorganisms. This technique can be found in one form or another in every historical and contemporary culture. Thus, fermentation, along with activities such as cooking with fire or heat, is a universal aspect of human culture. Since the transformation of food is carried out by actors that are invisible to us, it possesses a sense of wonder and mysticism.
During fermentation, conditions are created in which certain microorganisms can grow and thrive; the bacteria and fungi take care of the rest. Fermented food comes into being through waiting, through doing nothing. Each ferment is unique, and there is only limited control over it. For many people, relinquishing control to microorganisms is something very unsettling. However, lacto-fermented vegetables, for example, are among the safest foods of all.
